Cebu sits within the Philippine archipelago, where Spanish colonial rule lasted more than three centuries before United States administration and independence in 1946. Moving between the islands relies on ferries, roll-on roll-off boats and domestic flights, so a stay in Cebu City works well as a base between hops. Filipino cooking leans on vinegar, soy sauce, garlic and fish paste, with dishes such as pancit noodles and lumpia found across the region. The wet season runs roughly from June to November, while December to May brings drier weather.
